I am not a pancake person. But these pancakes are so special that I can't get enough of them.
Ingredients:
Dry ingredients:
1/2 cup all purpose flour
1/2 cup whole wheat flour
1/4 cup oats
1/4 cup chia seeds**
1 tsp cinnamon
1/2 tap baking soda
1 tsp baking powder
Salt
Rest of the ingredients:
2 ripe bananas
1 large egg
1/2 cup milk of choice
1/2 tsp vanilla extract
3 tbsp maple syrup (optional)
Coconut oil for frying
Optional add ins: Chocolate chips, chopped walnuts, blueberries, raisins, or whatever you like in your pancakes!
Directions:
In a medium sized bowl, whisk together all the dry ingredients and set aside.
In a blender, add the bananas, eggs, milk, vanilla, and maple syrup and blend until somewhat smooth. Gradually whisk the mixture into the dry ingredients until fully combined. If you are using add ins, this is the time to slowly fold them into the batter.
Heat up about a tsp of coconut oil in a cast iron or carbon steel pan on medium heat. Add 1/4 cup of the pancake batter in the hot pan. Wait until bubbles form all over the surface of pancake (1-2 mins), then flip and fry on the other side. Add more coconut oil as necessary for frying the rest of the pancakes. You can also fry them in 1/2 cup batches to get large pancakes, but note the cook time will be longer.
Stack them up, pour syrup over them, and enjoy!
